The extra virgin olive oil of Olis Cuquello is extracted only from the olives collected from the tree during the months of October and November, when the olives are at its point of veraison.
To produce a virgin olive oil of excellent quality we follow the following process. First we select the best trees to collect the olives that will be taken to the mill the very same day.
In the mill we will draw the oil from the olives, using mechanical processes, always by controlling the temperature to keep the aromas and the properties of the recently collected olives. Finally through a natural decantation process, we will store the oil in stainless steel tanks with absence of oxygen.
